Hot German Potato Salad

Our Church's High School students has a opportunity to go on a "Heritage" tour in the summer every so often and this year they are going to Germany and Scandinavia.  The Church has lots of fundraisers to help pay for the student's Air and lodging and this year one of the fundraiser is going to be a  cookbook.  The members of the congregation where asked to turn in a favorite German or Scandinavian recipe if we had one.  I don't know what they eat in Scandinavia and as for German food, all I know how to make is Hot German Potato Salad.  Then, I started to wonder, is German Potato salad really German food?? or is it something we made it up and just call it German??  I did a little research on them and here is what I found out about German Potato Salad if you want to know about its origin.

Here is my tasty tasty Hot German Potato Salad Recipe for your enjoyment!

6 med potatoes unpeeled (2 pounds)
1 cup Water
12 slices bacon cut to 1/2" pieces
1 cup chopped onion
3 Tablespoon sugar
3 teaspoon salt
2 teaspoon flour
1/4 teaspoon pepper
6 Tablespoon red wine vinegar
Minced parsley for garnish (you can use dry)
                                                                                                                                                     1. In a large pot (big enough to put all potatoes in) over high heat, heat potatoes and water to cover to boiling.  Reduce heat to low and cover and simmer for 20-30mins until its fork tender.      
  
     2. Drain potatoes and allow it to cool slightly.  Using a  sharp knife, peel and dice or slice the potatoes.
   
     3. While the potatoes are boiling,  in a large skillet over medium heat, cook bacon until crisp, remove bacon to paper towels to drain
 
           4. Spoon off all but 4 Tablespoon bacon fat from skillet,  add onions, cook until tender about 5 mins.  Stirring often.
  
           5. Stir in sugar, salt, flour and pepper until mixture is well blended.

6. Gradually stir in red wine vinegar and 1 cup water.  Cook, stirring the mixture constantly, until it is slightly thickened and boiling.
 
          7. Gently stir in potatoes and bacon; heat through then transfer salad to warm bowl or platter.  Garnish with minced parsley.
